  > 1. Bash up your lemon grass and mix it with the soy sauce, coriander stalks, ginger and garlic then rub all over the salmon fillet.

  > 2. Leave it to marinate for an hour or so, either in a plastic bag or on a tray covered with cling film.

  > 3. Preheat your grill to its highest setting. When you’re ready to cook the salmon, remove it from the marinade, brush with honey and grill for 10 minutes.

  > 1. Prepare the prunes the night before: combine all the ingredients in a bowl and leave to soak overnight.

  > 2. The next day, break up the chocolate and melt in a bowl set over a pan of simmering water, ensuring the bowl doesn’t touch the water. Remove the bowl from the heat and allow to cool.

  > 3. Warm the cream in a pan over a low heat, then mix into the chocolate until smooth.

  > 4. Separate the eggs and beat the egg whites and sugar with an electric whisk until fluffy. Whisk the yolks into the chocolate mixture, then gently fold this through the beaten egg whites.

  > 150 g caster sugar
  > 8 unwaxed lemons (should give you about 300ml juice)

  > 1. Finely grate the lemon zest into a pan, add the sugar and 250ml cold water, and warm over a low heat until the sugar dissolves, about 5 minutes.
  > 
  > 2. Strain the mixture through a fine sieve into a bowl, returning half the lemon zest to the liquid (discarding the rest). Squeeze in the lemon juice, catching any pips in your fingers.
  > Stir well, allow to cool slightly, then chill in the freezer for around 30 minutes, before removing.

  > 3. Transfer to an ice cream machine and churn until it’s the texture of sorbet. Pop it into a plastic container and freeze for 2 hours to firm up, before serving.

  > Pour warm water into a heatproof bowl until half full. Dip 1 rice paper wrapper in water. Place on a flat surface. Stand for 20 to 30 seconds or until soft enough to roll without splitting.
  > Step 2
  > Place one-eighth of lettuce along 1 edge of 1 wrapper. Top with one-eighth each of beansprouts, carrot, cucumber and avocado. Fold in ends. Roll up firmly to enclose filling. Cover with a damp tea towel to prevent roll drying out. Repeat with remaining wrappers, lettuce, beansprouts, carrot, cucumber and avocado. Serve with sweet chilli sauce.

  > 1 x 400 g tin of plum tomatoes

  > a bunch of fresh flat-leaf parsley
  > 4 squid with tentacles , cleaned
  > 1.5 kg clams , cleaned
  > 100 ml white wine
  > extra virgin olive oil
  > 4 fresh red chillies

  > 1. Preheat a large griddle pan over a high heat, then add the chillies and cook for 20 minutes, or until blackened all over, turning occasionally. Transfer to a bowl, cover with cling film and set aside for around 10 minutes to cool.

  > 2. Once cooled, peel and discard the blackened skin, then halve and deseed. 
  > 
  > 3. Heat a lug of olive oil in a medium frying pan over a low heat, then finely slice and add 2 garlic cloves. Fry for a few seconds, or until lightly golden, then add the chillies and tinned tomatoes, breaking them up with a spoon. 
  > 
  > 4. Bring to the boil, then reduce to low and simmer for around 5 minutes. Season with salt and pepper, mash well with a potato masher, then set the arrabbiata sauce aside.
  > 
  > 5. Cook the spaghetti according to packet instructions in a large pan of salted boiling water over a high heat.
  > 
  > 6. Meanwhile, pick the parsley leaves and set aside for later, then finely slice the stalks. Halve the squid tentacles, thinly slice the tubes, then finely slice the remaining garlic. 
  > 
  > 7. Preheat a large frying pan over a medium-high heat, add the parsley stalks, garlic, clams, wine and 2 large spoonfuls of arrabbiata sauce, then stir well. Add the squid and toss well to coat. Cover and cook for 3 to 4 minutes, or until the clams have opened.
  > 
  > 8. Drain the spaghetti, reserving a cupful of the cooking water, then add to the clams. Roughly chop and add the parsley leaves, toss well, adding a splash of the reserved cooking water to loosen, if needed. Stir in any remaining arrabbiata sauce if you fancy more of a kick, drizzle with extra virgin olive oil and serve straightaway.

- Method:
  > 1. Preheat the oven to 170ºC/gas 3.
  > 
  > 2.Peel the bananas and lay them in a snug-fitting heatproof dish. Finely grate the orange zest and put aside, then halve and squeeze over the juice of 1½ oranges.
  > 
  > 3. Drizzle with the honey and sprinkle over 2 teaspoons of the cinnamon, then roast in the oven for around 20 minutes, or until golden and soft, then set aside to cool.
  > Place the bananas and their syrup in a blender, then blitz with the milk and yoghurt.
  > 
  > 4. Add in a handful of the zest, the juice of the remaining orange half, a pinch of sea salt and the rest of the cinnamon, then churn in an ice-cream machine. If you don’t have one, freeze the mixture in a suitable container for about 3 hours; every hour, take it out, whip with a whisk, then return to the freezer.
  > 
  > 5. Serve in bowls with a scattering of orange zest and a fine grating of dark chocolate.

  > 1. Preheat your oven to its highest setting.

  > 2. Tear or roughly chop your mushrooms – thick, thin and wonky, it doesn’t matter, you want it chunky and rustic.

  > 3. Heat a large frying pan over a medium heat, add a lug of olive oil, the thyme leaves and mushrooms, and toss around a bit. 
  > 
  > 4. Next, add the sliced garlic and knob of butter. 
  > 
  > 5. Fry everything off for about 10 minutes until the mushrooms are browning a little around the edges. 
  > 
  > 6. Add the lemon zest with a good pinch of salt and pepper, then remove to a bowl and let it cool.

  > 7. Once cool, add the bread and toss together.

  > 8. Now turn your attention to the pork. Lay the loin and belly on a board, fatty-side down, and use a knife to make a little pocket between the loin and the belly meat.

  > 9. Stuff the cooled mushroom mixture into the pocket, then season well all over with salt and pepper. If you’ve got any garlicky, thyme and lemon juices left in the pan, pour these over the pork for some wonderful added flavour.

  > 10. Rub all the seasoning and juices into the pork.

  > 11. Roll the belly around the loin and tie it tightly with 5 or 6 pieces of string to keep it all in place. If your butcher gave you the bones, scatter them around the bottom of an appropriately sized roasting tray – you want the pork to sit quite snugly in the tray - and put the meat on top.

  > 12. Place in the oven and immediately turn it down to 180°C/350°F/gas 4 so the meat cooks through nice and evenly.

  > 13. This is a good time to get the crackling ready for the oven, so score the skin with a small sharp knife to open it up for seasoning.

  > 14. Bash up the fennel seeds and salt in a pestle and mortar, rub a generous amount of this into the skin and place it on a baking tray.

  > 15. After the meat has had an hour in the oven, take it out and add the chopped vegetables and remaining bulb of garlic to the tray, roughly broken apart into unpeeled cloves.

  > 16. Pour in the glass of cider and give the tray a shake to coat everything. Put it all back in the oven to cook for another hour. The crackling can also go in at this point.
  > Before the second hour is up, put a large pan of salted water on to boil. Peel and cut the celeriac and potatoes into even-sized chunks, then boil for 12 to 15 minutes until soft and ready to mash.

  > 17. Drain and let them steam-dry, then return to the pan with a good knob of butter, some seasoning and the milk. Mash until smooth, adding a splash more milk if you need it. Cover and keep warm until ready to serve.

  > 18. When the pork is ready, remove it from the oven on to a plate and cover with tin foil, so it can rest for about 20 minutes while you crack on with the gravy. You’ll have some nice roasted root veg and sticky goodness left in the bottom of the tray.

  > 19. Pour or spoon off the excess fat in the tray, then place it over a very low heat and pour in the stock a little at a time (you may not need to use all of it), using a potato masher as you go to mash up all the vegetables.

  > 20. Keep stirring to make sure you get all the lovely sticky brown bits off the bottom of the tray.

  > 21. Add the flour and keep reducing the gravy down until you get the consistency you like.

  > 1. For the cheat’s hollandaise, set a heatproof bowl over a pan of simmering water and warm the mayo, mustard and vinegar with a splash of water, stirring occasionally.

  > 2. Once combined, grate in the cheese and stir until it melts into the sauce. Taste and season. Keep it warm while you crack on with the rest of the dish.

  > 3. Add the spinach and a splash of water to a pan over a medium heat. Allow the leaves to wilt and cook until all the liquid has evaporated.

  > 4. Meanwhile, halve and toast your muffins.

  > 5. To poach your eggs, bring a pan of water to a light simmer, add a pinch of sea salt and the vinegar, then gently add the eggs to the pan. Depending on your pan, a really soft poached egg should take around 2 minutes; a soft-to-firm one will need 4 minutes.

  > 1. Halve the vanilla pods lengthways, scrape out the seeds, then add to a saucepan with the pods. Add the sugar, and the zest and juice from your lemon and lime.

  > 2. Bring to the boil, then simmer for a couple of minutes until all the sugar dissolves.

  > 3. Take off the heat, pour into a bowl and leave to cool. Don’t put your finger in for a taste, though, as it could burn you.

  > 5. Peel, destone and scoop the avocado flesh into a liquidiser with the syrup and milk. Blitz to a smooth, light consistency – like a smoothie.

  > 6. If you’ve got an ice-cream maker, put your mixture into it and churn till smooth and frozen. If not, pour it into a large baking dish or deep tray and pop it in the freezer, giving it a whisk every half hour or so until frozen and smooth.

  >  1 lemon, rind finely grated, juiced

  >  1 small zucchini, finely chopped
  >  2 celery sticks, thinly sliced
  >  2 green shallots, thinly sliced
  >  280g mixed carrots, peeled, coarsely grated
  >  50g (1/3 cup) dried cranberries
  >  1/2 cup fresh mint (firmly packed), chopped
  >  1/2 cup fresh coriander leaves (firmly packed), chopped
  >  2 tablespoons toasted pine nuts
  >  200g low-fat feta, quartered
  >  Extra virgin olive oil, extra, to drizzle
  >  Fresh mint, extra, to serve
  >  Coriander leaves, extra, to serve

  > Step 1
  > Place barley in a saucepan. Cover with cold water. Bring to the boil over high heat. Reduce heat to medium. Simmer, stirring occasionally, for 30-35 minutes or until tender. Drain. Refresh under cold running water. Pat dry with paper towel. Place in a bowl.
  > Step 2
  > Holding each orange over a bowl to catch any juice, cut along either side of the white membranes to remove orange segments. Reserve juice. Combine orange juice, lemon juice, oil and maple syrup in a bowl and season.
  > Step 3
  > Process cauliflower until finely chopped. Add cauliflower and zucchini to juice mixture. Set aside for 5 minutes to develop the flavours.
  > Step 4
  > Add orange segments, lemon rind, celery, shallot, carrot, cranberries, zucchini mixture and 3/4 of the herbs to the barley. Season. Toss to combine. Divide among bowls. Sprinkle with pine nuts. Top with feta. Sprinkle with remaining herbs. Drizzle with extra oil and sprinkle with extra herbs.
