Craft knife
The craft knife itself doesn't really matter, the important thing is having plenty of replacement blades for it. If you're cutting lots of stuff for long periods of time, you might want a more comfortable handle for your craft knife, but honestly you can get away with the cheapest varieties, so long you have spare blades.
