To get a nice clean cut to not damage the bonsai.

They have a really sharp blade and a long handle, generally. They allow you to get in nice and tight in between the branches and get to some of those hard-to-reach places and having a sharper blade stops you from actually squashing the branch when you cut it. A good set of bonsai scissors will be nice and comfortable as well.
