Hinges are set to produce a 3/32" thick tortilla when using a gluten-free grain such as corn, rice flour, cassava flour, or plantains. Performance with wheat flour will vary due to the gluten in the dough. The gluten will cause a pressed tortilla to shrink and become thick again. This can be overcome by allowing the dough to rest, adding fat to the dough (shortening, lard, olive oil) and pressing the tortilla, rotate 180 degrees, and pressing it again.
